Hey, thanks. I really like wood ears - hot and sour soup wouldn't be the same without them! I'll try a small amount and keep a sample in the fridge.

[...] Eat More Toadstools Blog added an interesting post on What to Do While Waiting for MorelsHere’s a small excerptIf you live in the Mid-Atlantic, here’s a few suggestions while you are waiting for that first morel to pop out of the ground: 1. Amish mud sales. These are late winter and spring auctions at the fire companies in Lancaster CO, PA. There is a good reason why they are called mud sales… bring your boots. You thought the Amish were plain people? Check out the buggies up for auction. Everything from the used “Chevy” buggy to the high end, low mileage “Cadillac” style with lots of extras. [...]

Hah, yeah swamp water does indeed have lots of tannins, but I think it's one of those things that a small amount may be good for you but a large amount is, well... disgusting (even though I like the way black water looks, I don't think I'd care to taste it).

Anyway, I'd rather drink red wine!

They're still in the refrigerator waiting for me to get a round tuit. I was just showing a Field & Stream writer around the local fungi that day, and hadn't really expected to find those. I did expect oyster mushrooms, and we found some of them also.

They're also a blood thinner medicinally. Something to remember if you have surgery scheduled and you're thinking about a bowl of hot and sour soup to fortify yourself.

I never thought about making tea from South Georgia river water when I lived there. Even the really clean river water, which there was years ago and may yet be, is loaded with tannins.

I don't know if the "good stuff" in the mushrooms is water soluble. Or if it even exists in acorns. A half decent chemist with a lab could probably figure some of it out, but I'm not in any position to do so.
